Travis Dickey had a love for authentic slow smoked barbecue and wanted to open a barbecue pit. The first Dickey's Barbecue Pit opened in Dallas, Texas in 1941. Dickeys began as a true family operation. The original owners, Travis and Ollie Dickey worked as a team to make the business successful. From Ollie making sandwiches to Travis working the block, they kept the menu limited. Staying true to family tradition, Travis Dickey's sons, Roland, and T.D. Dickey, took over the family business in 1967. With their involvement, Dickey's expanded through the Dallas Fort Worth area providing catering opportunities as well as introducing the iconic Big Yellow Cups. This exposure brought more demand from loyal guest and barbecue fanatics causing Dickey's to begin franchising in 1994.

Today, there are over 500 locations making Dickey's the largest barbecue restaurant franchise. While the business has expanded, the taste and flavor have remained the same. All meats are still slow smoked just as they were in 1941. The current menu consists of beef brisket, pulled pork, St. Louis style ribs, polish sausage, spicy cheddar sausage, smoked turkey, and marinated chicken.
