 **Keep your Rub Simple:** When seasoning your brisket, you’ll be tempted to use multiple rubs and spices to get the burst of flavor that’ll be the talk of the cookout. To get the best out of your meat, keep it simple. Pit Masters across the country have been using a simple rub of kosher salt and coarse black pepper to get the smoky bark we all know and love.  **The Right Cut:** All meat isn’t created equal, so purchasing the best quality of the cut you can afford will make a world of difference. After one taste of a quality cut, you’ll be thankful you didn’t settle for less.
 
 **Don’t Get Discouraged:** Barbecue is a blend of art and science, a delicate process that transforms large cuts of meat into tender, delectable satisfaction with fire, smoke and love.
