In my daily life as an East Coast journalist, pretty much all I eat is lentils, salad, and lentil salads. The thing is, I recently returned to my homeland, Texas, for a reporting trip. Before you ask, hipster, I’m not from Austin, or even Houston. I’m from the gosh-dang suburbs of Dallas, where lentils and salads are less plentiful, and beef and cheese are ... more so.
Midway through it, I traveled to the small town of Wichita Falls, in central Texas, where my stomach microbes were further exposed to things they’ve never witnessed in their precious, coddled, organic Washington, D.C., lives. I’m talking ice cream that isn’t Halo Top and tap water from a La Quinta bathroom.
I have returned with, for now, a brief travelogue of things I ate. I had limited time, limited cash, and limited options. Some of my stops were quintessentially Texas; others were maybe a standard deviation more Texas than the average fast-food meal, yet might be accessible in your impersonal, master-planned suburban home. But they were all delicious, and I’m not dead, so I can only assume the same experience would hold for you.
I say this not as a health reporter, but as a friend: Here is what you should eat if you ever find yourself in North-Central Texas.

Four states will soon have new Dickey's Texas-Style Barbecue thanks to recent franchising deals made by the chain, beginning in Green Valley Ranch, Colorado, where franchisee Eric Williams brings his first location of the brand this summer.
The U.S. Army veteran has always wanted to own his own establishment and will put his military discipline to good use in the trade when he opens the store in the coming months.&nbsp;
"I have always wanted to own my own restaurant and now seemed like the perfect time and Dickey's was the perfect fit because they allowed me to thrive off my entrepreneurial spirit," he said in a news release.&nbsp;
Also joining the Dickey's Barbecue Pit franchisee fold is Krage Fox, who will bring four new Dickey's locations to southwest Michigan, beginning in Kalamazoo this summer, followed by locations in neighboring cities.
"The dedication and excitement Krage and his business partner have shown is something that truly inspires all of us at Dickey's," said&nbsp;Laura Rea Dickey, CEO of Dickey's Barbecue Restaurants Inc. The former pharmaceutical industry employees and his business partner both love Texas-style barbecue and were looking for a brand to enter the industry with.&nbsp;
Meanwhile, new Dickey's Barbecue Pit franchisees, Lawrence and Debby West and their business partner, Debbie Hudson, plan to open their first Dickey's location in Rolla, Missouri this summer as well.&nbsp;

Dickey’s Barbecue Pit, the first Dickey’s location in Rolla, plans to open their doors this summer with slow-smoked meat cooked on site.
The authentic Texas-style barbecue will be available for the community at an expected date of Monday, June 18, according to owner of Larson Construction, Jim Larson, who is the contractor for the business located at 1040 Kingshighway.
The restaurant will be open Monday through Sunday, 10 a.m. to 7 p.m., and offers Brisket Mac Tacos, Beef Brisket Classic Sandwiches, cookies, pies and Jalapeño Cheddar Kielbasas, to name a few items on the diverse menu.
What is the secret to success for the locally owned business?
The franchise is family owned by Debby West, along with business partner, Debbie Hudson. The restaurant will offer a warm and open ambience, along with hometown values at their restaurant -- treating each customer as family is the end goal.
“The three will be on site every day to connect with the community while offering free food for children on Sundays and treating every customer as a V.I.P,” stated Larson, who is excited for the mouthwatering Beef Brisket offered on the menu that the Rolla community will be able to dig in to.

A pair of partners are planning to open four new barbecue restaurants in the region.
Krage Fox, of Kalamazoo, and a business partner whose name was not disclosed recently became franchisees of Dickey’s Barbecue Pit, a restaurant chain based in Dallas.
The partners&nbsp;plan to open their first location in Kalamazoo this summer, followed by three other locations in undisclosed “neighboring cities.”
Fox owns another business in Kalamazoo, Commercial Window Coverings, and said he has always had a passion for barbecue and dreamed of opening a restaurant.
“When researching franchises, it all came down to loving the business model and the quality of the food,” Fox said. “Dickey’s offered everything we were looking for in a franchise concept, including delicious food, a proven business model, support for franchisees and an established brand.”
Fox’s business partner has experience in the restaurant industry and also has “a passion” for Texas-style barbecue.

A great event celebrating all that Duluth has to offer is back for its second year. It's Taste of Duluth, which is set to be held July 14 at Bayfront Festival Park. Organizers say the inaugural running last year encompassed the city well, and they want to build on that.
 
"When we started last year, we wanted to highlight our Culture and a little bit of who we are as a community,where we've been in the past, a little bit about our industry..." Tracy Lundeen of Lundeen Productions says. "The 'taste' implies a taste of who we are."
 
The company co-produces this event with Twin Ports Nightlife. Tracy explains that taste also obviously emphasizes food in Duluth. He was in studio with Austan Lundeen on Monday morning. They both jokingly agreed that it's always a plus to have as much food as possible. This year, attendees will see the likes of Dickey's Barbecue Pit, Farley's Family Restaurant, Lucky's 13 Pub, The Other Place Bar &amp; Grill, and Saigon Cafe. There will also be a slew of caterers showing off all they have to offer as well.
 
The event featuring all things Duluth is back for its second year at Bayfront Festival Park. It runs from 11 a.m. to 7 p.m. on Saturday, July 14.
 
In addition, people of all kinds are welcomed to attend. Tracy Lundeen says the free admission makes the idea of going more attractive to residents and tourists alike.
